Butcher search splits in two. The local half (“butcher near me”, a prime rib for Saturday) is won on the map, with hours and holiday cut-offs that match the shop. The online half is won cut by cut: “brisket” alone gets 190,000 searches a month in the US, and it goes to the store whose page names the cut, the grade and the delivery. I build both, and measure them in orders and order value, not visits.

If your steaks are named for the counter and not for the search box, Google has nothing to match the shopper to.

Counter names

Products named the way the shop talks, not the way shoppers search

A steak listed only as “Scotch fillet” or “rump cap” is invisible to the shopper typing “ribeye” or “picanha”. The cut name, the grade and the weight belong in the title, with the local name beside it.

Variant sprawl

Every weight and grade published as its own URL

The same ribeye exists as four pages for four weights and two grades, each thin and each competing. Google picks one to rank, and it is rarely the one carrying the reviews and the links.

Collections without a job

Category pages that are only a product grid

Broad searches like “wagyu beef” and “dry aged steak” go to a collection page. A bare grid gives Google nothing to rank. The page has to explain the grade, the ageing and the delivery.

Growth bought with discounts

Orders up, order value down

On one wagyu butcher account, the same monthly report showed orders up 91% while average order value fell about 42% and discount per order roughly tripled. Full-price demand is the number to grow, so I report both.

A wagyu butcher selling in store and online in Australia. Searches for the shop's own name grew 130% to 1,600% off a small base, and the August 2026 report showed organic sales up 264% on the same month a year earlier.

The honest part: Average order value fell about 42% (A$449 to A$259) as discount per order roughly tripled (A$158 to A$482), so the order growth leaned on smaller, discounted orders. GA4 conversions on this property are a tracking fault and are never used. Ahrefs estimates organic traffic at about 3,821 visits a month: a small business.

The words you'll hear, and what they mean

The trade and SEO terms that come up in food & butchery work, so a report never reads like a foreign language.

Primal cut
One of the large sections a carcass is broken into (chuck, rib, loin, round) before steaks and roasts.
Marble score (MB)
How much fat runs through the muscle. On the Australian wagyu scale, MB 8–9 is near the top.
USDA grade
Prime, Choice or Select, set mostly by marbling. Prime is the highest of the three.
Dry ageing
Hanging beef in a cold room with controlled humidity for weeks. It loses weight and gains flavour.
Collection page
The category page (“Wagyu”, “Roasts”) that lists products and ranks for the broad search.
Product variant
One product with options (weight, grade, thickness) instead of a separate page for each.

What people ask before starting

Do butchers need SEO if most sales happen at the counter?

The counter is found through the map. “Butcher near me” gets 60,000 searches a month in the US, and the holiday rush starts on a phone. If you sell online too, product and collection pages carry the rest.

Should every weight and grade have its own product page?

Usually not. One page per cut with weight and grade as options keeps the reviews and links in one place. A grade earns its own page only when shoppers search it by name, like A5 wagyu.

Does SEO work if we only deliver locally?

Yes. A delivery page that states the zones, the order cut-off and how the meat stays cold answers what “meat delivery” searchers check before they buy. I plan it around the areas you actually reach.

How do you report results for a food store?

Organic sales, order count and average order value, side by side. On the wagyu account, orders rose while order value fell, and I would rather show you that than one flattering line.
